This recipe is a perfect side dish to bring to a party. It’s one of my favorites. It’s also very easy to make.
2 cups of cooked quinoa
1 diced cucumber
1 small red onion diced
½ cup of extra virgin olive oil
1 cup of fat free feta cheese
1 red pepper seeded and diced
1 orange pepper seeded and diced
Toss all ingredients together in a large bowl and chill. Serve cold.
